On Friday October 12th, at 19.00, Professor Dimitris Kouretas of the Department of Biochemistry-Biotechnology of the University of Thessaly will invite us, from the stage of the Thessaly Science Festival, to consider a series of exciting questions about fasting.
How does fasting affect the human body and disease?
In his speech, Dr. Kouretas will try to shed light on the biochemical paths of the changes made to man when he lacks food, that is fasting. Fasting may not be related to the lack of food observed in the old man due to lack of food, but it follows precisely the same biochemical pathways. How does fasting affect various diseases such as cancer, diabetes mellitus, metabolic syndrome, cardiovascular and nervous system diseases? Does it also affect the aging phenomenon? Could we use techniques of dietary fasting to protect our health?

Professor Demetrios Kouretas is Professor of Physiology-Toxicology in the Department of Biochemistry-Biotechnology, University of Thessaly, Greece. His field of research is the mechanisms of antioxidants in health and disease. He has published more than 150 peer-reviewed papers with more than 5000 citations with an h-index of 38. He He is scientific advisor of Eatwalk , a start-up company specialized in functional food development. He was vice Rector in University of Thessaly ( 2013-2014) and he is member of the committee of Experts in Commission in Chemical Threats.
